Professional Roos knows every customer by name. She listens, thinks along with you, and senses the atmosphere you envision. In her words:

That commitment literally extends to the kitchen. Chef Tom has Roos taste every new dish first — so she, too, feels the experience that will soon be served to the guests.
“I want everyone on our team to know how a dish should taste,” says Tom. “We don't just cook for customers; we cook together.”

Tom is a chef who doesn't rest until it's perfect. He tastes, re-tastes, adjusts, plays, adds, and subtracts until every bite is exactly what he wants his food to express.
“Anyone can create a dish. But we want you to think with the first bite: ‘Wow, what was that?’”
His cuisine is one for people with hands and teeth—food that can drip, crackle, and live. Always with refinement, but never sterile.

At Insieme, we start with recognizable dishes and give them their own character.
Like our Caesar salad, where roasted pointed cabbage takes the place of the classic lettuce—enriched with a crunchy crumble and spicy notes that let the vegetables shine.
Or the cassava cracker, which, thanks to an unexpected topping, tells a whole new flavor story.
“I love playing with expectations,” says Tom. "Not to shock, but to surprise. Every bite should have a special impact."
